Xanthan gum is a high-molecular-weight polysaccharide polymer produced by Xanthomonas bacteria through carbohydrate fermentation. When exposed to high temperatures, xanthan gum undergoes a conformational transition from an ordered to a disordered state. The temperature at which this transition occurs is known as the melting temperature. In the disordered state, the viscosity of its aqueous solution is significantly lower than in the ordered state. At temperatures exceeding 120°C, xanthan gum gradually degrades due to thermal breakdown, rendering it unsuitable for high-temperature, high-salinity downhole conditions.
